It is known that Jinju Bibimbap originated from the Jinjuseong Battle, during the Japan's invasion of Korea in 1593. At that time, women served foods for the military men who were battling at the Jinju castle. However, the soldiers didn't have enough time for their meal, so the women served rice, vegetables and raw meat altogether in a bowl instead of serving the foods individually. We call this combination of food, 'Jinju Bibimbap'.
Unlike other local food, Jinju Bibimbap includes raw meat, and five seasonal vegetables, which makes it distinctive. The vegetables makes it both healthy and visually attractive. Another unique feature of Jinju bibimbap is its freshness. Since the cuisine includes raw meat, the bibimbap demands high degree of freshness.
The reason why all bibimbaps, including Jinju's, is so healthy is that they are well balancing nutritious ingredients. Bibimbap is a perfect example of healthy eating.
